We used to make these when I was a kid at Christmas time. I found this recipe clearing out an old notebook and was in the mood for some non-alcoholic twinged nostalgia.

  • 1/2 cup butter softened
  • 1 cup white sugar
  • 1 egg
  • 1/4 cup milk
  • 1/3 cup cocoa
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 bag marshmallows (cut in half)

In a mixing bowl, cream butter and sugar together. Add egg, milk and vanilla and mix well. Combine flour, cocoa, baking soda and salt in separate bowl and beat into creamed mixture. Drop rounded teaspoonfuls onto cookie sheets. Bake approximately 8 minutes and remove from oven. Press marshmallow half (cut side down) into each cookie and return to oven for 2 minutes. Cool on rack before serving. Enjoy!
