I made these over the weekend and they were epic!

Preheat oven to 350 degrees (F).

Place the following in a mixing bowl:

1/2 cup vegetable oil
3 large eggs
1 1/2 cups granulated sugar
1 1/2 cups pumpkin purée (canned pumpkin)
1 1/2 teaspoons pumpkin pie spice
1 1/2 teaspoons salt
1 1/2 teaspoons baking powder
2 teaspoons vanilla extract

Beat everything together and add 2 cups of flour stirring just until smooth.

Grease 2 standard donut pans and fill about 3/4 full. Bake 15-18 minutes until cake tester comes out clean. Let stand for about 5 minutes before placing on drying rack. Toss in sugar and try not to eat them all in one sitting. (Spoiler: I failed at this).

Note: I used a blend of confectioners sugar (about 1/3 cup) with about 3-4 tablespoons of brown sugar (I used dark), and mixed in about 2 teaspoons of pumpkin spice. I tossed each warm donut in a ziplock bag and placed on a rack to finish cooling. Magic!
